TWD: Blueberry Crumb Cake

This week’s TWD recipe was chosen by Befuddlement by Sihan. You can find the recipe on her blog or in Dorie Greenspan’s book Baking From My Home to Yours on pages 192-193.

This crumb cake was delicious. It was very easy to put together, though you definitely need to follow the directions carefully, especially if using frozen blueberries.

I also noticed that my baking powder was slightly expired, ummm ok REALLY expired. So I ran out and bought some more before continuing!

My edges started to brown before the cake was done in the middle, so I covered all the sides with foil and put it back in till the center was done. Perfect! I also made a glaze from some blueberry juice and powdered sugar. MMMMM it didn’t need it though, it was sweet enough without it!

We ate half and I gave the other half to my neighbor who raved about it. A winner!

    Your cake looks so pretty with the glaze! I wonder why baking powder comes in such a big container – even if you bake a lot, it takes a long time to get through the whole thing!

    Foil…THAT’S what I should have thought of…you are so right…my edges were browner than I wanted. Your cake looks lovely, and how creative and fun is that drizzle? Very nice…I learn so much each week from all the creative bits you all do…I am so NOT creative…when I see it done, I can copy it, however. Stealing your drizzle next time. Thanks.

    I’m glad to see that I’m not the only one who finds outdated stuff tucked in the back of the cupboards. LOL!

    I hope to make this later today. Like a lot of things, it might not get done until later in the week.

    I’m noticing the people who used frozen blueberries had to cook theirs longer, makes sense now that I think about it!

    The glaze is a great color! Good move on buying new baking powder before making the cake, it does matter.
